Polysorbates, also known as the “Tween” series, are nonionic surfactants derived from sorbitan esters with added ethylene oxide chains. They are water-soluble and commonly used to form oil-in-water (O/W) emulsions.
Polysorbates are widely applied in beverages, creams, injectable drugs, and personal care products due to their high HLB values and excellent solubilizing abilities.
