The Sugar Alcohol Backbone: Where Sorbitol Comes From
Every Span and polysorbate molecule begins with sorbitol — a sugar alcohol that forms the chemical anchor. Food-grade sorbitol comes from two main crop sources:
Corn (Maize)
The most common source. Corn starch undergoes enzymatic hydrolysis to break it into glucose, then hydrogenation converts that glucose into sorbitol. Corn-sourced sorbitol is cost-effective and widely available — it’s the industry standard for food-grade Span and polysorbate production.
Tapioca (Cassava) — Non-GMO Option
For markets with strict Non-GMO requirements (such as the EU), tapioca starch from cassava roots is the premium alternative. It delivers the same chemical stability with a cleaner Non-GMO profile. Cassava is not genetically modified in commercial agriculture — the Non-GMO claim is inherent to the crop, not a production choice.
The Fatty Acids: Vegetable Oil Sources by Product
If sorbitol is the backbone, the fatty acid defines the function. Whether you’re buying Span 20 or polysorbate 80, the difference comes down to which vegetable oil was used:

The Manufacturing Process: 4 Steps from Crop to Emulsifier
Step 1 — Feedstock preparation. Sorbitol is produced from starch (corn or cassava) via hydrolysis and hydrogenation. Fatty acids are isolated from vegetable oils through hydrolysis and fractional distillation. Both are verified for food-grade purity before entering the reactor.
Step 2 — Esterification. Sorbitol and the fatty acid are reacted at elevated temperature (200–250°C) under vacuum with an acid or base catalyst. Sorbitol dehydrates to form the cyclic sorbitan ring, and the fatty acid esterifies onto one or more hydroxyl positions. This produces the sorbitan ester — Span 20, 40, 60, 65, or 80.
Step 3 — Ethoxylation (polysorbates only). The sorbitan ester reacts with ethylene oxide (~20 moles per mole of ester) under pressure. This adds polyoxyethylene chains to the free hydroxyl groups, producing the corresponding polysorbate — polysorbate 20, 40, 60, or 80. Ethylene oxide is the only non-plant input in the process, but it represents a small fraction of the final molecular weight (~30% for polysorbates).
Step 4 — Purification and QC. The crude product is neutralized, bleached, vacuum-stripped to remove residual ethylene oxide and 1,4-dioxane, and filtered. The finished product is tested against FCC or EU purity specifications before release.

- Sustainability: Palm oil is the primary fatty acid source for most grades. RSPO-certified (Mass Balance) palm derivatives are available. Sunflower-based Span 80 and PS80 are options for brands avoiding palm oil entirely.
